Can cork be used as a cutting mat?

We don't recommend using cork as a cutting mat. Cork is a naturally soft material, and the force of a knife cutting into it would greatly diminish its lifespan and cause cuts that would be difficult to clean. Knife cuts leave grooves in the cork that can trap food particles, making thorough cleaning difficult.
